Abstract

To overcome the poor solubility and instability of curcumin, an oil-in-water emulsions were prepared using four food-grade emulsifiers (MSP, SC, SSOS, SE). Their physicochemical properties, stability, and antioxidant capacity were characterized. And their inhibition efficacy in heterocyclic amines (HAs) was evaluated by coating chicken wings prior to air-frying (190 °C, 15 min). The SC-stabilized emulsion (Cur-NE-10gSC) exhibited superior stability with droplet size of 164.1 nm and PDI of 0.187, and achieved 93% reduction in total HAs (from 4.59 to 0.30 ng/g, p < 0.05), outperforming its non-emulsified counterpart and other formulations. CLSM analysis revealed that SE-based emulsions possessed the best skin penetration, correlating with their high sensory acceptability. This study demonstrates that emulsification, particularly with SC and SE, is a highly effective strategy for delivering curcumin, significantly enhancing its bioavailability, stability, and functional efficacy in inhibiting HAs formation while maintaining sensory quality, offering a practical solution for safer meat processing.

Preparation, characterization, stability, and application in curcumin of the emulsion gels stabilized with coconut cake albumin modified by ultrasonication and carboxymethylation

Background Curcumin has applications in food and medical industries, but its stability and bioaccessibility are poor. Coconut cake albumin (CCA) has potential as a component of the curcumin-loading system; however, relative data are scare. Methods Herein, emulsion gels were formed using coconut cake albumin modified by...

Enhancing the emulsifying properties of dihydromyricetin-based nanoparticles for the fabrication of β-carotene-loaded emulsions under various pH.

BACKGROUND Dihydromyricetin (DMY) possesses excellent antioxidant capacity and multiple bioactivities, yet its poor water solubility, intense bitterness, and low bioavailability severely limit its application as a functional ingredient. Constructing composite nanoparticles using hydrolyzed wheat gluten (HWG) and β-cycl...

Soy Protein Isolate-Chitosan Maillard Graft-Stabilized Curcumin-Loaded Emulsions for Encapsulation and Sustained Release

Hydrophobic bioactive compounds are difficult to deliver because of poor water solubility, limited stability, and uncontrolled release. In this study, chitosan-soy protein isolate (CS-SPI) conjugates were prepared by dry-heat Maillard reaction and used as natural polymeric emulsifiers for curcumin-loaded emulsions. The...
