Abstract

Simple Summary Poultry meat is an important source of food worldwide, and its consumption is expected to continue increasing. However, the very rapid growth of modern broiler chickens can negatively affect some aspects of meat quality and increase the occurrence of breast muscle problems. This review examines recent nutritional and feeding strategies that can help maintain or improve the quality and nutritional value of broiler meat. Reducing dietary protein while providing sufficient essential amino acids can maintain desirable meat quality and may reduce feeding costs. Different dietary fat sources can modify the fatty acid profile of meat; most sources leave pH largely unaffected, although some (e.g., soybean oil, rice bran oil) alter color and texture traits such as lightness, redness, or shear force depending on the specific oil and inclusion level used. Omega-3-rich ingredients such as fish oil, linseed products, and marine algae can increase beneficial omega-3 fatty acids in meat, generally with limited effects on pH and color, though higher inclusion levels of some sources (e.g., DHA-rich microalgae) can increase drip loss and shear force. Enzyme supplementation can help maintain meat quality when lower-energy diets or less digestible feed ingredients are used. Feed restriction can help reduce breast muscle problems and, in most of the studies reviewed, did not adversely affect major physical meat quality traits. In addition, a moderate pre-slaughter fasting of approximately 8–12 h may help minimize the stress-related deterioration of meat quality. Overall, appropriate nutritional and feeding strategies can support meat quality and may contribute to the production of nutritionally valuable meat for consumers.

Current Nutritional Approaches to Maintain and Improve Broiler Meat Quality: Part-2 Functional Feed Additives

Simple Summary Poultry meat is widely consumed because it is a nutritious, affordable, and easily digestible source of protein. Improving its quality and nutritional value is therefore important for consumers and the poultry industry. This review summarizes how functional feed additives, including probiotics, prebiotic...

Effect of dietary grape seed oil supplementation on growth performance, biochemical antioxidant status, meat quality parameters, and nutritional value in broiler chickens

Broilers are one of the most widely used white meat products in the world, so the quality of their meat is important to raise their nutritional value, as vegetable oils are usually used in feeding broilers because of the great energy they provide. The present study aimed to assess the effects of dietary grape seed oil...

Effects of Dietary Supplementation with Indigenous Probiotic Bacteria on Meat Composition, Carcass Traits, and Economic Efficiency in Broiler Chickens

The chemical composition of broiler chicken meat is one of the most reliable indicators of its nutritional and biological value. Improving meat quality while reducing the use of antibiotic growth promoters has become a major objective in modern poultry production. This study investigated the effects of an indigenous pr...

Hemp seed oil-supplemented finisher diets for lambs: Impact on meat physicochemical quality and oxidative stability.

The growing interest in dietary lipid sources to improve lamb meat quality and oxidative stability has positioned hemp seed oil (HSO) as a potential functional lipid. However, evidence of its effects on ruminant meat quality and oxidative shelf life remains limited. This study evaluated the physicochemical attributes,...

Hybrid meat: A comprehensive review of composition, processing, and consumer acceptance

The increasing human population will escalate the demand for meat and alternative meat products. The term “hybrid meat” can be used to define food products that combine conventional animal meat with alternative protein sources, such as plantbased ingredients, insect protein, or cultured cells. These products are design...
