Nutritional, Phytochemical and Pharmacological Evaluation of Red Morph Amaranthus viridis L. Variety KAU Vaika
Abstract
The present study evaluated the nutritional, phytochemical, antioxidant, and antimicrobial properties of red morph Amaranthusviridis L. variety KAU Vaika. Proximate analysis revealed high moisture (864.82 g kg⁻¹ FW), protein (52.67 g kg⁻¹ FW), carbohydrate (83.21 g kg⁻¹ FW), and dietary fiber content (9.34 g 100 g⁻¹ FW), indicating excellent nutritional value. Significant amounts of chlorophylls, carotenoids, phenolics, and flavonoids were also recorded. Preliminary phytochemical screening confirmed the presence of phenolics, flavonoids, tannins, alkaloids, terpenoids, saponins, glycosides, proteins, and carbohydrates. FTIR analysis identified major functional groups associated with bioactive compounds.
