Abstract
Apple nectar is widely consumed due to its high nutritional value and pleasant taste; however, maintaining its quality during extended storage remains a major commercial challenge. In recent years, using natural plant extracts as alternatives to synthetic preservatives has received increasing attention, but systematic studies evaluating the specific formulation, chemical stability, and shelf-life of apple nectar blended with basil leaf extract remain highly limited in existing literature. This study aimed to evaluate the effects of basil leaf extract on the physicochemical properties, sensory quality, and storage stability of apple nectar. The experiment was conducted in 2025 at Kabul University using a Factorial Completely Randomized Design (F-CRD) with eight treatments (1–7% basil extract) and three replications over 90 days. The results showed that both basil concentration and storage duration significantly affected all parameters; TSS, acidity, total sugars, and reducing sugars increased, while pH, non-reducing sugars, and sensory scores decreased over time. Formulations with 1–3% basil extract maintained the highest quality stability and overall acceptability. In conclusion, incorporating 1–3% basil extract provides a viable, natural alternative to synthetic additives, which successfully optimizes both the nutritional value and marketability of functional apple nectar during storage.
This study was conducted to develop a functional pomegranate nectar enriched with ginger extract. The physicochemical properties, storage stability, and sensory quality of the enriched nectar were evaluated under ambient storage conditions. The experiment was conducted in 2025 in the Horticulture Department laboratory...
The increasing demand for healthy beverages has encouraged the development of products containing natural ingredients with nutritional and functional benefits. This study aimed to develop a functional beverage using carrot juice, aloe vera gel, and cardamom extract and evaluate the effects of different formulations on...

Cold storage of orange fruit reduces its respiration rate and metabolic process. This helps to decreasing the postharvest loss in orange fruit. Cold storage efficiently keeps the physicochemical qualities under control such as weight, firmness, total soluble solids and acidity, when coupled with the proper postharvest...

Custard apple (Annona squamosa L.) is a highly nutritious yet underutilised fruit owing to its seasonal availability and short postharvest life. The present study aimed to develop a shelf-stable instant ready-to-serve (RTS) beverage mix using spray-dried custard apple powder and banana powder and to evaluate its physic...

Fresh goat milk is perishable and has a distinctive flavor that may reduce consumer acceptance. Incorporating lontar fruit and sweeteners such as honey and stevia may improve its physicochemical properties. The present study aimed to investigate the effects of different sweetener types and concentrations on the charact...
