Abstract
Eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) are n-3 polyunsaturated fatty acids with EPA receiving increasing attention due to its documented beneficial effects on cardiovascular and cerebrovascular health. In this study, an effective enzymatic transesterification employing multi-step addition of water was developed to produce EPA-enriched glycerides from glycerol and fatty acid ethyl esters. Lipozyme 435 showed the best performance in EPA-enriched glyceride synthesis. Furthermore, multi-step water addition significantly enhanced glyceride synthesis efficiency, and the underlying mechanism was investigated using molecular dynamics simulations. Under the optimized conditions (65 °C, 6 h, 2.0 mbar, an ethyl ester to glycerol molar ratio of 3.5:1, and a lipase dosage of 6%), water was added at 2 h and 4 h, with 5% (w/w) relative to the mass of ethyl esters. The triacylglycerol (TAG) content in the product reached 82.31%, while the EPA and DHA contents in the glyceride fraction were 60.50% and 20.57%, respectively. A novel finding of this study is that the catalytic performance of the lipase in the transesterification is significantly influenced by the multi-step addition of water under vacuum.
Medium and long-chain triacylglycerols (MLCTs) are functional lipids, but their efficient synthesis in various systems remains challenging. An ultrasound-assisted enzymatic interesterification process was developed using tricaprylin and algal oil as substrates. The optimized enzymatic conditions were obtained by artifi...

Octacosanol (C28), mainly found in rice bran and sugar cane, possesses cholesterol-lowering properties but is limited by poor bioavailability. This study optimized the sulfuric acid-catalyzed synthesis of lauric acid-esterified octacosanol (LEO) and oleic acid-esterified octacosanol (OEO) to enhance their bioactivity...

Glycerolysis of palm oil is an important process for producing monoglycerides (MG) and diglycerides (DG) for food, pharmaceutical, and cosmetic applications. However, the reaction is often limited by mass transfer resistance between the immiscible glycerol and oil phases. In this study, the continuous glycerolysis of p...
The paper presents the results of a comprehensive study of fatty acid diethanolamides (FADEA) synthesis from three types of vegetable raw materials: coconut, palm kernel, and sunflower oils of RBD grade. The fatty acid composition of the starting oils and the resulting amidation products were determined by gas chromato...

Alkyl-chain architecture may influence both the enzymatic synthesis and antioxidant performance of phenolic esters. This study examined the esterification of dihydrocaffeic acid with four isomeric C5 alcohols catalyzed by immobilized Candida antarctica lipase B (CALB). The isolated products were evaluated using process...
