The synergistic evolution of structural characteristics and interfacial behavior in the Maillard reaction process regulated the emulsifying properties of flaxseed globulin-flaxseed gum conjugates.
Flaxseed globulin (FG), the predominant protein in flaxseed, exhibits suboptimal emulsifying properties that limit its food applications. The Maillard-driven glycation with polysaccharides offers a promising strategy to enhance protein functionality. This study elucidated the dynamic structural changes, interfacial behavior, and emulsifying properties of flaxseed globulin (FG)-flaxseed gum (FSG) conjugates. Covalent grafting between FG and FSG was confirmed by grafting degree and SDS-PAGE. The conjugates exhibited reduced particle size (206.33 ± 3.86 nm), increased absolute zeta potential (25.53 ± 0.43 mV) and enhanced solubility (76.48 ± 0.58%). Protein unfolding introduced greater disorder (random coils increased by 47.20%) and conformational flexibility (57.99%). Decreased interfacial tension accelerated protein adsorption and rearrangement at the interface, promoting a thicker, more stable interfacial layer. Notably, FG-FSG-6 h demonstrated superior emulsifying properties (76.37 ± 0.93 m2/g, 20.16 ± 0.49 min). This study established a foundation for engineering high-performance flaxseed globulin-based emulsifiers.
Despite the high nutritional value of flaxseed protein isolate (FPI), its food applications remain limited due to poor foaming and emulsifying properties. The current research examined the effects of ultrasonic treatment (0, 100, 200, 300, and 400 W, 15 min) on FPI functionality, with primary focus structural alteratio...
Native chickpea protein isolate (CPI) exhibits unsatisfactory solubility and dispersibility, restricting its interfacial performance and emulsion-stabilizing capacity. Herein, CPI gels were subjected to combined high-pressure homogenization and ultrasonication pretreatment to fabricate CPI microgel particles (CPIMPs),...

Rice bran protein (RBP) exhibits limited functional properties because of its compact structure, which reduces its interfacial adsorption capacity and consequently constrains its food applications. This study combined moderate enzymatic hydrolysis and non-covalent complexation with tannic acid (TA) to improve RBP funct...

This study investigated the gel-forming capacity and storage stability of myofibrillar protein (MP) affected by capsanthin emulsions (SXCEs) stabilized by soy protein isolate (SPI) and xanthan gum (XG). SPI-XG formed a stable interfacial layer through hydrophobic interactions and hydrogen bonding, increasing emulsifyin...

Flaxseed protein (FP) has great potential as a food-grade nanocarrier for bioactive compounds. However, its insufficient stability severely limits its practical application in food systems. To address this limitation, FP was glycosylated (gFP) and complexed with ethyl cellulose (EC) to construct composite nanoparticles...
