Abstract
Sugarcane juice has emerged as a popular isotonic beverage choice in Asia. The sugar industry is increasingly looking to shift production lines toward this beverage as a means of product diversification. Unfortunately, the drink has a short shelf life. Thermal sterilization is one method applicable at an industrial scale; however, the impact of high-temperature exposure on the phytochemical stability and nutritional value of sugarcane juice requires careful assessment. This study aimed to evaluate the physicochemical changes (pH, total soluble solids/°Brix, and clarity), phytochemical composition (FTIR, total phenolic content), and functional properties (antioxidant capacity, prebiotic index) of sugarcane juice beverages during processing and sterilization (115°C for 15 minutes) with varying additions of lemon and ginger extracts. The results showed that processing lowered the pH (from 6.0 to 5.0-5.2) and increased clarity based on transmittance values (from <20% to ~70%). FTIR analysis revealed no significant changes in functional groups. Phenolic analysis indicated a decrease in phenolic content with the addition of ginger extract, while antioxidant capacity declined following sterilization. However, the addition of lemon extract increased antioxidant capacity. Prebiotic index analysis demonstrated that all formulations retained prebiotic activity against
Lactobacillus rhamnosus.
Ultimately, sterilization at 115°C for 15 minutes preserved visual quality, antioxidant and prebiotic value, with the addition of lemon extract enhancing antioxidant capacity.
ABSTRACT This study investigated the potential of hazelnut beverage, obtained from hazelnut cake through high‐pressure homogenization (100 MPa), for use in water kefir production. The effects of different sugar concentrations (2.5%, 5%, and 7.5%) on product properties and hazelnut allergenicity were also examined. Suga...

A cutting-edge method for processing coffee has recently been developed that employs ohmic heating-based fermentation combined with a semi-carbonic maceration technique. This innovative process involves fermenting whole coffee cherries without removing their skin and pulp. In addition to altering the properties of coff...

Valorization of by-products originating from processing agricultural produce into food products is considered an important factor in transforming the food industry toward a circular economy that stays in line with the concept of sustainable development. This research aimed to explore the technological properties of ind...
Post-harvest losses of tropical fruits pose a challenge to food sustainability, making fermentation a strategy for generating value-added products. This study aimed to evaluate the effect of fruit type (banana and orange), sweetener (sugar and honey), and S. cerevisiae concentration (0.1 and 0.3 g/L) on the physicochem...

Background: The purpose of this study is to assess the use of molasses as a food additive in ice cream products. Methods: This by-product of sugar production, could be used as a replacement for white sugar at various ratios (0%, 15% and 30%). Result: The results showed that molasses is rich in minerals and bioactive co...
