Abstract
Thermal processing of yellowfin tuna (Thunnus albacares) often results in lipid oxidation and textural degradation, particularly in high-oil formulations. In this study, a pressure-resistant "rigid-elastic" bilayer microcapsule (gelatin: κ-carrageenan: carboxymethyl chitosan = 3: 1: 1, onset thermal degradation temperature = 395 °C) was developed and combined with ultra-high pressure (UHP, 300 MPa) to improve the stability of fish oil-enriched surimi gels. The microcapsules maintained morphology integrity after UHP treatment, exhibiting a low fracture rate of 0.6%, which enabled effective physical confinement of fish oil within the pressure-restructured surimi gel matrix. The microcapsule-UHP coupling promoted protein unfolding and subsequent intermolecular cross-linking, reducing the dehydration and de-oiling rates of the surimi products by 62.4% and 58.7%, respectively, while increasing gel strength by 75.2%. Concurrently, lipoxygenase activity and free radical generation decreased by 47.6% and 79.8%, respectively, effectively delaying lipid oxidation and protecting EPA and DHA. These results indicate that pressure-tolerant encapsulation can improve oil retention by reinforcing matrix confinement during gelation, thereby providing an effective strategy for producing nutritionally fortified and process-stable seafood gel systems.
The increasing depth of oil wells and associated elevated formation temperatures pose significant challenges to conventional crosslinked polymer gels used in hydraulic fracturing, as viscosity degradation severely impairs proppant transport and stimulation efficiency. In this study, a thermally stable organic boron cro...

Hydrogels are promising cushioning materials for fresh produce packaging because of their viscoelasticity, deformability, and energy-dissipation capability. In this study, a UV-curable hydrogel based on methacrylated hyaluronic acid (HAMA) was developed. Through ethylene glycol (EG) annealing, a cushioning material (HA...

Improving the structural stability and water-retention capacity of gelatin hydrogels is important for expanding their application in high-moisture food systems. In this study, composite hydrogels (CYPG) were prepared by combining gelatin with Chinese yam polysaccharide (CYP), and the effects of CYP concentration (0-0.8...

This study investigated the effect of κ-carrageenan (CRG) concentration on konjac glucomannan (KGM)/sodium caseinate-based emulsion gels and evaluated their protective effect on β-carotene. Adding CRG induced a sol-gel transition, resulting in structured emulsion gels. Microstructural analysis showed that the synergist...
Reducing salt from 2.0% to 1.0% in silver carp (Hypophthalmichthys molitrix) surimi compromises gel quality and storage stability. This study evaluated the dual effects of protamine on gelation and storage stability in low-salt surimi. Salt reduction decreased gel strength from 2161.66 to 1842.10 g·cm and water-holding...
